Practical teaching in the field of hotel industry education originated at the École Hôtelière de Lausanne (1893) in Switzerland more than a century ago. More than half a century later in 1950, an experimental teaching hotel was officially incorporated into the hospitality education system on the campus of Cornell University in the United States. Known as the Statler Hotel, this teaching facility was funded through a generous gift from Ellsworth Milton Statler. The Statler Hotel is used as a base for cultivating elite management talent for the international hotel industry, and has been used as a model for other teaching hotels built by strong and prestigious universities, including Michigan State University, the University of Houston, and the University of Nevada Las Vegas (UNLV) in the United States, and the Hong Kong Polytechnic University and the Chinese University of Hong Kong in Asia.

In general, teaching hotels are broadly divided into three categories in terms of management (Singh, 2019)
In the third category, the university has training facilities and also cooperates with third-party hotels. In this model, the university owns some of the hands-on training facilities and equipment, such as teaching kitchens, dining rooms, beverage labs, and banqueting facilities, while using the third-party hotel as a partner teaching hotel for hands-on instruction. This model allows the university to have more autonomy in its choice of training venue, and also permits the university to use the third-party hotel to carry out hands-on instruction without business pressures. However, with this model it can be difficult to control the amount of teaching that takes place in the hotel. Some elements of this model are also present in Hotel ICON, the Hong Kong Polytechnic University’s teaching hotel.
In 2019, after an investigation on the advantages and disadvantages of each model in the global practical teaching system, the Gingko College of Hospitality Management explored a novel management mode by leveraging teaching with its teaching hotels and relevant facilities. The College is located in its nearly 600-acre/35.3 hectare new campus in Yibin City. Other teaching facilities on the new campus include a multifunctional experimental training center for smart hotels, a teaching cafeteria, apartments for students and faculty, an administrative building, and a sports complex.
In the first category, the teaching hotel is owned by the university and operated by the School of Hotel Management. This model requires the employment of a general manager vested in the university to fully supervise the daily operations and curricular activities of the teaching hotel. This model provides absolute control over the quality of the curriculum and teaching, as well as revenue from the operation of the hotel, but the operational pressure and operating costs are high. Teaching hotels that fall into this category include the Statler Hotel at Cornell University and the Hotel ICON at the Hong Kong Polytechnic University.
In the second category, the university partners with a third-party hotel. This model requires the university to operate with a third party. The university signs up for a working relationship with an existing third-party hotel and uses it as a teaching hotel to ensure that the students involved in the program are getting proper first-hand experience. This model has limited control over the teaching aspect of the hotel, but does not require much effort to oversee the hotel’s day-to-day operations. The partnership between the Chinese University of Hong Kong and Hyatt Regency is an example of this model.

The Gingko Standard Teaching Hotel is unique in that:
The teaching hotel and the campus are integrated and work together to accomplish the College’s pedagogical aims. The faculty of both campuses work together to develop course content and undertake teaching tasks, learning from each other and complementing each other's strengths. The teaching team includes university professors from the Chengdu campus, who excel at clarifying key principles of the discipline and in hotel industry development (know why); and industry elites from the teaching hotel who have many years of experience in international brand hotels (know how). These industry experts share best practices in the workplace with students and guide them on how to explore and improve their practical skills, knowledge, and sense of identity and pride in the industry.
The teaching hotel belongs to the university and is built for teaching. The Gingko Standard Teaching Hotel is a practical training venue for the eight departments of the Gingko College of Hospitality Management. It is used by more than 12,000 students from six disciplines and members of the public who are interested in working in the hotel industry and related fields.
The main task of the hotel is, naturally, teaching. As a primary responsibility, teaching is overseen by all the hotel staff and instructors, from the general manager to the department head. By operating the hotel well, these individuals provide students with real practice and work scenarios. The College fully controls the content and quality of all teaching taking place on the hotel premises.
