Pork Tripe Stew Chicken, also known as Pork Belly Chicken Hot Pot and Phoenix Reincarnation, is a traditional Hakka dish from Guangdong Province. It’s popular in Huizhou, Heyuan, Meizhou and other eastern Guangdong areas. With a strong medicinal and pepper aroma, thick and clear soup is a necessary pre-dinner soup in the Hakka area of Guangdong.

Pork Tripe Chicken, as the name suggests, refers to a whole, clean chicken stuffed into a pig tripe and cooked in a soup with a variety of ingredients and herbs. Then, remove the whole "pork belly wrapped chicken" from the soup, cut the chicken and pork tripe into pieces and put them back in the pot. After the soup rolls again, the belly absorbs the chicken flavor and the chicken melts the belly odor.

猪肚鸡顾名思义，指的是将处理干净的整只鸡塞入猪肚内，再佐以多种配料和药材煲汤烹饪。随后，再把整只“猪肚包鸡”从汤中捞出，将鸡与猪肚斩件后重新装回锅内，待汤汁再次翻滚后，肚吸鸡味，鸡溶肚香。
