Cantonese food is characterized by rich and delicate ingredients and light flavor, because there are so many ingredients to choose from. As a Cantonese, I am very fond of the taste of Cantonese food, like Boiled sliced chicken, Cantonese morning tea, hot soup, Clay Pot Rice.

粤菜特点是丰富精细的选材和清淡的口味。粤菜可选原料多,自然也就精细。作为一个广东人,我尤其喜欢粤菜,像白切鸡、广东早茶、老火靓汤、煲仔饭等等。

Chinese cuisine is a general term for the various foods from diverse regions and ethnic groups in China, the main representatives of which are "Eight Cuisines". Each cuisine stands out for its differences in climate, geography, history, cooking techniques and lifestyle. Vast and deep culture of Chinese cuisine, one of the three cuisines of the world, benefits from a reputation at home and abroad.

中国菜是中国各地区、各民族各种菜肴的统称,也指发源于中国的烹饪方式。主要代表菜系有“八大菜系”。每一菜系因气候、地理、历史、烹饪技巧和生活方式的差异而风格各异。中国饮食文化博大精深,作为世界三大菜系之一的中国菜,在海内外享有盛誉。

Salt Baked Chicken is a traditional Cantonese dish originated from the Hakka, which only requires chicken and coarse salt. The cookers just wrap the chicken in parchment paper and slow-baked in a clay pot with piping hot coarse salt. 

盐焗鸡是一道来自客家人的传统广东菜,只需要鸡和粗海盐即可做成。做法也非常的简单,用油纸将鸡包起来,裹在滚烫的粗海盐的砂锅中慢慢焗就行了。

Guangdong steamed vermicelli rolls is the most popular breakfast and neighborhood food in Guangdong. With cheap price, delicious taste, it is suitable for both the young and the old. The rice noodle roll is a small roll made with a wide strip of rice milk that is typically filled with vegetables, beef, pork or shrimp. Generally, the sauce is made of soy sauce and other sauces,which tastes sweet.

肠粉在广东是最受欢迎的早餐,也是一种非常普遍的街坊美食,它价廉、味美,老少咸宜,妇孺皆知。肠粉是一种小卷,里面馅料主要有生菜、猪肉、牛肉、虾仁等,酱料一般是酱油及其他酱制成,口感较甜。

DELICIOUS FOOD IN HEYUAN

Stuffed Tofu is one of the most famous dishes in Hakka, especially in Heyuan city. Stuffed Tofu means that there is a piece of meat in tofu.

酿豆腐是客家最著名的菜肴之一,在广东省河源市尤受欢迎。酿豆腐的意思是:豆腐里的一块肉。

It is said that this dish originates from northern dumplings. As there is little wheat in South China, the Hakkas use stuffed tofu as an expression of their affection for northern dumplings and the cultivation of the central plains. It is the favorite among Hakka people when the season is joyful or busy.

Stuffed tofu is characterized by freshness, sweetness, rich nutrition and so on, and it has been promoted by local people and tourists.

据说这道菜源于北方饺子,由于南方小麦稀少,客家人便用酿豆腐寄托对北方饺子、中原文化的感情。每逢时节喜庆,或者闲忙之余,它就是客家人的最爱。

The way in which stuffed tofu is made is very unique. It mainly uses pork belly, tofu and other ingredients as raw materials. There are several steps. 
First, chop the pork with the knife; second, add the eggs and mushrooms; then, mix well with the seasonings; finally put the mixed stuffings into the tofu and steam it until cooked.

酿豆腐的制作工艺非常独特。主要以五花肉、豆腐等食材为原料。
首先将猪肉用刀剁碎,加入鸡蛋和蘑菇,然后与调味料拌匀,最后再将调好的馅料填进豆腐中蒸熟即可。

酿豆腐具有鲜嫩滑香,营养丰富等特点,一直都深受当地民众和外地游客的青睐。

Pork Tripe Stew Chicken, also known as pork belly chicken hot pot and Phoenix reincarnation, is a traditional Hakka dish from Guangdong Province. It’s popular in Huizhou, Heyuan, Meizhou and other eastern Guangdong areas. With a strong medicinal and pepper aroma, thick and clear soup is a necessary pre-dinner soup in the Hakka area of Guangdong.

猪肚煲鸡,又名猪肚包鸡火锅、凤凰投胎。是广东省传统的客家菜。流行于广东的惠州、河源、梅州等粤东一带。广东客家地区酒席必备的餐前用汤,汤里浓中带清,有浓郁的药材味和胡椒香气。

Pork Tripe Chicken, as the name suggests, refers to a whole, clean chicken stuffed into a pig tripe and cooked in a soup with a variety of ingredients and herbs. Then, remove the whole "pork belly wrapped chicken" from the soup, cut the chicken and pork tripe into pieces and put them back in the pot. After the soup rolls again, the belly absorbs the chicken flavor and the chicken melts the belly odor.

Legend has it that in the Qing Dynasty, Emperor Qianlong ordered the imperial kitchen to stew supplements for Concubine Yi to eat because she was weak after giving birth to a stomach disease. The imperial kitchen put the chicken into the pig's stomach and stewed it with rare herbs. After a period of dieting, Yi Fei's stomach was cured and her skin was rosy and shiny. Since then, Qianlong has called this dish "Phoenix Reborn", which is now the hot pot of pork belly chicken, and it has been widely spread among people since then.

猪肚鸡顾名思义,指的是将处理干净的整只鸡塞入猪肚内,再佐以多种配料和药材煲汤烹饪。随后,再把整只“猪肚包鸡”从汤中捞出,将鸡与猪肚斩件后重新装回锅内,待汤汁再次翻滚后,肚吸鸡味,鸡溶肚香。

相传在清朝,因为宜妃有胃病,产后身体虚弱,乾隆吩咐御膳房炖补品给宜妃吃。御膳房把鸡放进猪肚里加上名贵药材炖汤,经过一段时间饮食调理,宜妃的胃病已痊愈而且肤色也红润有光泽。从此乾隆把这道菜叫做“凤凰投胎”,就是现在的猪肚鸡火锅,便从此在民间广为流传。

紫金八刀汤是一道客家名菜,它不仅色、香、味俱全,而且具有很高的营养价值。它是紫金人招待客人的最佳美食。

相传一位盲人去饭馆叫了一份汤,盲人怕厨师偷工减料,他就数厨师切了多少刀。厨师挑选出猪的八个部位各切一刀,煮成汤给盲人。盲人觉得很美味,就问厨师是什么汤,厨师告知猪杂汤。盲人说猪杂汤不好听。因为厨师一共切了八刀,所以盲人将汤命名为八刀汤。

Legend has it that a blind man went to a restaurant and ordered soup. The blind man was afraid that the chef would deceive him, so he counted the number of times the chef cut it off. After selecting eight parts of a pig and slicing them, the chef boiled them into soup for the blind. The blind man thought it was delicious, so he asked the chef what kind of soup it was, and the cook told him it was a kind of soup with some organs and pork. The blind man believed that the soup's name was quite ordinary. Later, the soup was named Badao Soup by him as the chef made eight cuts in total.

打边炉

When the cold snap hits, eating hot pot at home is one of the best ways to protect against the cold. The Hakka edge-fired stove is an effortless way to enjoy hot pot with no complicated techniques, and it never disappoints. The production market is fully stocked with all the necessary ingredients. Upon returning home, we can wash and chop them before adding them to the pot. Bring a pot of chicken soup to a boil and prepare a bowl of soy sauce infused with ginger and shallots. We can then use it to marinate whatever we like.

The first step should be to bring a bowl of freshly prepared chicken broth. Then, fill the pot with hot water and add your favorite meat, such as chicken, pork. Finally, add vegetables to balance out the meat's richness and create a well-rounded dish.

Tacos, a kind of Mexican food, is popular in Europe and the United States for its simple preparation and diverse tastes. It's basically a tortilla of meat, lettuce, sweet corn, cheese, etc., and served with different flavors of salsa, but the classic is the actual tomato salsa.

墨西哥玉米卷饼是一种墨西哥食品,因其制作简单、口味多样而风靡欧美。它是用肉、生菜、甜玉米、奶酪等做成的玉米饼,再配上不同口味的萨尔萨酱,其中最经典的是番茄萨尔萨。

Yangrou Paomo, or Pita Bread Soaked in Lamb Soup, is a famous local snack in Shanxi region. Reportedly, during the Tang Dynasty, there was a Tang general named Yu Chigong, who was patrolling Chang'an City and found that the soldiers' diet was very simple and lacked nutrition. So he came up with a new way of eating - Mutton and Bread Pieces in Soup.

陕西羊肉泡馍是陕西地区传统的小吃之一,它有着悠久的历史和传说故事。据传说,在唐朝时期,有一位大唐将军名叫尉迟恭,他在长安城巡逻时,发现士兵们的饮食很单一,缺乏营养,因此他便想出了一个新的饮食方式——羊肉泡馍。

This dish was originally invented by Yu Chigong. He diced the lamb, then seasoned it with scallions, ginger, garlic, and assorted spices; then boiled water, soaked the noodles in water; then added mutton, bun slices, and other spices, stirred well. So the hot and fragrant Mutton and Bread Pieces in Soup was born.

It is not only delicious, but very affordable. It became a staple food for soldiers in the Tang Dynasty, and later spread to the people. Over the years, Yangrou Paomo has gained immense popularity and is now renowned as one of the most distinctive traditional delicacies of Shaanxi.

羊肉泡馍这种食物不仅好吃,而且非常实惠。它成为了唐代士兵们的主食,后来也传到了民间。随着时间的推移,羊肉泡馍越来越受欢迎,成为陕西地区最具特色的传统小吃之一。

Cantonese herbal tea is neither cold nor tea, which can be traced back to one thousand years ago. Our ancestors tried to get rid of the internal heat generated by the hot and moist climate of Guangdong, so they collected some heat-clearing and toxin-resolving herbs to simmer. When this practice was popularized in a popular society, some people with a traditional knowledge of Chinese medicine developed all kinds of herbal teas after a long-term experience. 

广东凉茶,既不是冷饮也不是茶,已有一千余年的历史。广东天气湿热,先民试图祛除体内产生的热气,所以采集了清热解毒的草药来熬制。这一做法在民间普及后,一些具有中医药知识的人经过长期实践,创造了各种各样的凉茶。

People's eating habits vary greatly from place to place and culture to culture. For the health-loving Cantonese, herbal tea is a unique existence.

不同的地域,不同的文化,人们的饮食习惯千差万别。对于爱好养生的广东人来说,凉茶是一个独特的存在。

Later, pots of herbal tea also appeared on the desks of some apothecary. This herbal tea, which reduces summer heat and humidity, has been enjoyed by Cantonese ever since.

However, in recent years, the number of herbal tea shops on highways and byways has been shrinking. Instead, there are various drink shops. The reasons lie in rising rents, raw material costs and changing consumer tastes and preferences. Therefore, in a bid to survive, a growing number of herbal tea shops choose to adapt to market changes and consumer needs.

然而,近年来,大街小巷的凉茶铺越来越少。取而代之的是各种饮料店。原因在于租金上涨,原材料成本和消费者口味和喜好的变化。因此,为了生存,越来越多的凉茶铺选择适应市场变化和消费者需求。

It is true that the survival of traditional herbal tea has stumbled, but the commercial development of herbal tea is proceeding, which makes this quintessence of Chinese traditional culture fashionable.

诚然,传统凉茶的生存举步维艰,但凉茶的商业化发展却生生不息,带动着中国传统文化步入时尚潮流。
